The Paris Cookbook by Patricia Wells (HarperCollins;
$44.95) -- The food critic for the International Herald
Tribune spent years buttonholing chefs in Parisian restaurants
and bistros and beating their recipes out of them for
the
good of those who don't happen to live in the City of
Light. This is no coffee table book, and it can be daunting
if your interest in cooking is sporadic or vicarious.
But the results, once on the table, are superb.
