"The Paris Cookbook" by Patricia Wells (HarperCollins, $30).

Armchair Francophiles, travelers and adventuresome home cooks can take flight with Patricia Wells, an acclaimed cookbook author who has spent 20 years in France, writing about food in Paris, Provence and Italy.

Following her popular "Food Lover's Guide to Paris," the new cookbook explores in detail the city's food scene, from bistros to elegant three-star legends, and includes 150 recipes from famous chefs as well as from cheese-akers, market vendors, butchers and home cooks.

Wells, restaurant critic for the International Herald Tribune, knows all about American kitchens and writes clearly and carefully about re-creating French cuisine at home. She's also a great tour guide through the City of Light.

Her recipe notes are practical and personal, and her culinary travel guide includes addresses, telephone and fax numbers and even Metro stops for an authentic bowl of Brasserie Balzar's Midnight Onion Soup, a department
store's Chicken Fricassee With Two Vinegars and a vendor at a biweekly farmers market who has the recipe for "The Apple Lady's Apple Cake."
